The most obvious choice is the dark elf, but you can acquire a very high-level dark elf very quickly. It seems a shame not to take her into your party, but if you want a variety of characters and you already have a dark elf, that's a problem. I prefer magic-heavy parties, so I seldom use knights, minotaurs or trolls. I usually start with a cleric or a necro, but if you prefer might-based parties, the one I would not go for would be the minotaur. The troll's GM mace is quite a tasty skill, and with GM regeneration, it doesn't matter that his best armour is leather. The knight is probably slightly better, though. With GM in sword, spear, plate and shield, the guy is a walking tank. Your party doesn't really need his GM repair, the troll's mastery in this is probably enough.
