But I had the impression they were selling different items, just items of about the same level. One thing I am pretty sure of is that if you sell stuff to them, they don't keep it long. I know this because I was worried at the start of the game that if I sold stuff to the wrong store it would end up cluttering up the menu there, so for a while I tried to sell the appropriate items to the appropriate stores until I got sick of all the running around. But then I noticed when I went back the items I sold were gone anyhow.
