Leave the Dook's Castle, save your game outside, and quit the game. Then load up Windows Explorer, find the Minisaves subdirectory, and delete all the minisaves that start with "Dookscastle". Then reload MM9, load your savegame, and re-enter the Castle. With a bit of luck, the whole Castle should respawn and the Dook should come back. The only downside of this is that you may lose artifacts in the black chests. You may want to rob the chests before doing this.
