One possibility is taking advantage of those corners  Behemoths are too big so that they get stuck at the corners often.
Therefore lure a Behemoth to a corner where it will hang. Take bows and fire from a safe distance. After some firing, the Behemoth will fail, even an Ancient Behemoth
That's how I pass the Tunnels playing a "level 1 speedgame". When I arrive to the Tunnels, I am far from being enough strong to face them. The "bow method" works even if it needs some patience. You can also try halberds (long reach) but you risk not only that you get hit but also that the Behemoth succeeds in turning around the corner.
When you enter the Tunnels, the way north on the first crossing leads to a "glove" (see your map). The "glove" contains some behemoths caught in the "fingers". They usually (usually! not always!) cannot pass the "fingers" because of their sizes. Start there and cleanse the "glove". The entrance to the "glove" is the first suitable corner, where you can shoot down Behemoths.
