The monk is the second best melee fighter in the game and can do massive damage on average, while the thief only does this every so often. The disarming is a thing the consider, but if you are playing a mainly fighting group they should have enough Hit POints to withstand most traps and the Monk can disarm many smaller ones. The monk and knight will easily have the hit points of a dragon (1400) and so traps do not really consern them. Socerers, on the other hand, can be slaughtered by a powerful trap or two. The parties you have listed I would say are about equal. The one with the monk would rely very hevily on Melee, and the Sorcerer would definately be more back up. With the thief the melee is still there, but now the sorcerer will have more to do, since the enemies aren't falling quite as fast.
