Have you tried cranking up your Knight's Might/Accuracy/Luck stats?
Sword and {Expert} Dagger combo works quite well early on until you can [Master] two Swords.
Before putting too many precious skill points into Shield, have you considered using a spear [now], or two [later] ?

IMHO there is a problem with the aiming system in the game - after all how may Monsters can really be trees? - sometimes you need to look around [in turn based mode] ...sideways & up'n'down... to work out which target is the closest and start there. You can get variances on exactly whereabouts you should actually click on that target too.
